Plane of endzone....and sideline?

If the ball breaks the supposed plane of the endzone its a touchdown...then why if a player reaches out of bounds on the sideline and catches a ball while two feet are inbounds is it not considered out of bounds and an incompletion?....Seems like a double standard...the gola line plane is a stupid concept and complicates offciating.
